True Food Kitchen, a health-oriented restaurant developed by Fox Restaurant Concepts and best-selling author Dr. Andrew Weil, plans to open its first San Diego restaurant June 25 at Fashion Valley mall.
It will be the fifth U.S. location for the franchised, full-service eatery, according to a May 14 statement from Arizona-based Fox Restaurant Concepts. Others have opened in cities including Scottsdale, Santa Monica and Newport Beach.
The concept’s developers include Michael Stebner, who operated the farm-to-table restaurant Region in Hillcrest nearly 10 years ago. The Mission Valley location’s executive chef is Nathan Coulon, a Point Loma native who previously worked at Quarter Kitchen in San Diego.
The 8,200-square-foot Mission Valley restaurant will have seating for 191 inside and 120 on the outside patio. The patio will have lush landscaping and a central fire pit, the statement said.
Materials selected for the restaurant are environmentally friendly, including high efficiency kitchen equipment, low-voltage LED lighting, reclaimed wood floors and recycled furnishings.
The menu includes “global cuisine” with Mediterranean, Asian and California influences, with items including wild caught fish, Angus natural beef and free-range chicken.
